I wing alot of my cooking so not 100% sure on that exact quantities but this is close enough.
Heat a cast iron pan and cook 2 pieces of bacon until crispy and set aside.
Finely dice 1 red onion and 4 garlic cloves.
Cook it oil and and a good knob of butter.
Add the 200grms of minced paua and fry off for 2 minutes, add fresh cream around 150mls. Reduce heat and simmer until it thickens,(can and abit of flour if needed) .
Add the juice and zest of one lemon and a good crack of pepper and a few sprigs of fresh thyme.
Top with the diced crispy bacon and fresh flat leaf parsley.
Serve with fry bread.
