    Crumbed Fish for tea

    Try this

    Dry your fish fillets and put on plate.
    Season liberally with salt, black pepper.
    Zest a lemon over the fillets.
    finely cut up a small piece of ginger and add to the fish. Mix the fish around and leave for 10 minutes.
    Throw all the fillets in a bag with some plain flour and shake.
    Mix a couple of eggs and coat all the fillets with egg and then fine bread crumbs.
    Let stand in fridge for a bit then oven bake in a hot oven.

    Serve with wedge of lemon
    I prefer it cooked in the oven rather than deep fried.

    We had this tonight for tea and the vegetable component of dinner was tomato sauce!!! BUT you could also use sweet chilli sauce
