    right...here goes.....
    legs of youngish ones are like lamb...bland in taste
    steaks are good,easy to season up for added flavor
    now the real gold comes when you take an oxtail stew recipe and use wallaby tails instead....cut then right up close to bum...meaty bits are great.... the next day if you upend pot,the stuff wont fall out,the tendons break down into gelatine VERY RICH.

    wow I didnt think of the tail funnily enough. That is awesome , and what Harrymax said... in pastry with a beetroot sauce would be next level.
