    eating wallaby

    Ive had a look around here for wallaby recipies with no results . What are they like to eat? Hopefully not too possumy, being a marspial. A nice cooked wallaby would go a bit further than a rabbit or hare meat wise.

    Had it once and it was fine. Back legs stewed in crock pot with red wine sauce. It was like a cheap cut of beef. No complaints from the fussy family.

    I have had roast leg and it was very good. No doubt there will be stories of worms coming shortly.

    Worms do get mentioned. I try not to fossick around in the guts of any animal I've shot.

    right...here goes.....
    legs of youngish ones are like lamb...bland in taste
    steaks are good,easy to season up for added flavor
    now the real gold comes when you take an oxtail stew recipe and use wallaby tails instead....cut then right up close to bum...meaty bits are great.... the next day if you upend pot,the stuff wont fall out,the tendons break down into gelatine VERY RICH.

    Had wallaby at Jano bistro in Wellington and it was awesome (they are great chefs though). They served the tail (wrapped in pastry with a beetroot sauce) and backstrap as medallions.

    I'd definitely eat it again.

    Best advise I got was to leave them where you shot them and get a pie from the servo on the way home.

    wow I didnt think of the tail funnily enough. That is awesome , and what Harrymax said... in pastry with a beetroot sauce would be next level.

    A chef mate roasted a wallaby leg and reckoned it was some of the best game meat he’s tried - rubbed it with rosemary and garlic, roasted for 30 minutes, rested for 15 minutes. Verdict was ‘Really tasty meat, like a more flavourful lamb, slightly sweet meat’

    I find it pretty bland, sort of the ideal meat for vegetarians, have been told about the tails but never done it next time maybe.

    Made plenty of wallaby curries, although theyll make even the rankest meat edible. Had a few in stew but like a curry its what you add in for flavor at the end of the day. Id eat it again no problem.

    It's my understanding that the worms are only found in the intestinal tract, proper handling of a head shot animal in decent nick and I am happy to eat it.

    Stew etc. Even did a tail on the coals Aboriginal style once. Would do it again
