    Shot hundreds but never eaten one. Some like them, some don't. Often when I'm shooting at one, a Fallow deer falls over, so I'll stick with that along with the other 4 legged varieties.

    I went looking for wallaby recipes on here and found this thread. I tried wallaby for the first time today, after shooting one at Tekapo on the weekend. It was surprisingly good, like someone said it's pretty bland for red meat. Probably the least gamey wild meat I've had, but it made great meatballs. Got 5kg of meat off the back legs which was pretty impressive.

    I had kangaroo pies in Aussie - damn good -just a bloody big wallaby - but emu now thats really good - tried croc nah no nyet would not rate that at all - put in same category as pukeko - possum great and I mean great dog tucker thats it

    long and slow, suggest a 50/50 mix of masterfoods cajun spice and 50% soft brown sugar for 12 plus hours thena long cold smoke. (also great and pork ribs)

    Have roasted legs of wallaby and as @Micky Duck says just like lamb.
    Also wallaby pies with plum sauce are delicious and are a must if you visit Waimate.

    A mate of mine would turn it into jerky and loved it. Never tried myself, but hey, might be worth a shot!
