    Electric to Gas Smoker Conversion(help required)

    Since spending over 18 hours smoking my last lot of mettwurst and salami in a Bradley smoker I have been on the hunt to find something with a larger smoking chamber that I can move around.
    With a lot of luck the below smoking cabinet come up on FB marketplace and I jumped on it.

    It is set up for 3 phase elements but those have been removed at some point but not having 3 phase at home that was not an issue for me. I will probably use the temperature controller to control the top damper when I'm using wood or charcoal as the heat source.
    The smoke generator was missing so I will throw my UFO smoker on the side of it when not using wood as the heating fuel.
    I want to have the option of using wood, charcoal or gas as the heat source but don't know what I'm doing with the most dangerous of the 3...gas.

    Below is a gas drawer you can buy for the new version of this smoker, are there any gas fitters out there who could advise me on what to buy(gas parts) to make one of these set-ups?
    I would like to incorporate some kind of flame fail cutout so the thing doesn't become a bomb too.
