After too many feeds of dry roast duck ,we found this old recipe .
The only way I cook ducks now ,they fall apart after .Think the fruit
marinates them as they cook .Very tender & moist ,think the gravy finishes
them nicely.
Fruit filled wild duck
1 wild duck
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon ginger
1/2 lemon
1 Apple quartered
1/2 orange quartered
1 onion quartered
juice of 1/2 orange
Singe & clean duck.Cut out oil sack at base of tail,
cut off neck at body,leave on neck skin.Rinse & dry.
Rub cavities of duck with mixture of salt,pepper
and ginger.Rub surface of duck with cut side of lemon.
Fill cavities with quartered apple ,orange & onion.
Close opening with skewers.Brown the duck in a
pot ,then fill with water to half way up duck. Squeeze
over half orange.Simmer for 3 hours basting
regularly,thicken gravy to finish.
