    Used snapper fillets because I've got them coming out my ears! Unlike curries, it's not a long cooking process, so no different to any shallow frying recipe. Any fish would work. Next time, I'll scale, gut and steak the fish as per the video. The Indian boys at work do this with anything they can get their hands on whether it's shark, kahawai or tuna!
