Dougie, I could not get over the fact that you could buy pumpkin puree in tins!!!! I brought back a tin of Pumpkin Pie Spice. I love some maple syrup drizzled over the top!!

Dougie, I drove the boss to work today as I had an early shift at the sanctuary. Here are her comments:
Some game meat has stronger smell than others. So for instance Springbok and Rabbit are relatively mild, but Kudu, Oryx and Hare have a stronger smell. Some of the larger antelope/deer have a very strong grassy smell on the raw meat.
For rabbit, cube it or pre-cook and flake it, then add some bacon. Also an idea to use onions with a stronger flavour - spring onions etc.
For hare, or any other stronger smelling game meat, the best option is to give it a rub with Dijon mustard before cooking. Be quite liberal in the amount of mustard, you don't need to wash it off, and no, it will not overpower the meat.

Gadgetman is right, Dougie...soak in salt and water for a while say three hours should do it. To test the age of the Hare, rip its ear (after its demise of course! they find the act very disturbing if they are alive!!!)...if it rips easily then it is a young one...old ones usually have a lighter fur colour and longer nails and often tatty ears.
Yep mum soaks rabbits it brine, also cleans them of any fluff or blood.
Dads job when he was a kid was to shoot a hare with the shotty once a week and its would hang until the pellet holes oozed and or pellets dropped out. This may or may not be an exaggeration i don't know.

Dougie I use shampoo and conditioner to clean mine and keep it from smelling. Might not be the same sort of hare though.
