Mexican goat, perfect for tacos, burritos etc

I went out on saturday for a goat hunt in a forest, between dad and little bro we dropped four. Two were kids and the other was a nanny. We took the hind legs and backsteaks off all of them. On the walk out of the forest I was already starting to work through ideas in my head for how to cook this. I defrosted the nanny’s leg last night and cooked it in the slow cooker all day today.
Ingredients are:
Goat leg
Tin of tomatoes
Carrots
Onions
Capsicum
Chillies (can use chilli powder, works fine)
Neutral oil
Cumin
Smoked paprika
Coriander powder
Dried or fresh oregano
S&P to taste
Any other burrito ingredients, e.g lettuce, tomato, sour cream etc
Method:
lightly char onions, capsicum, chillies and carrots in a pan.
Toast the spices in same pan in oil
Add tomatoes
Add oregano
season
Transfer to the slow cooker
Let it go all day (around 10 hrs)
(optional) occasionally baste the cooking juices back over the meat
Shred up the leg before eating, it will be falling apart at this point
Pour over some of the cooking juices to add more flvaour and moisture
Serve in burritos/tacos/any mexican vessel
Finish with fresh herbs, I used coriander but it could be parsley or oregano
In hindsight I should have been more aggressive on the vegetable charring.
This came out absolutely divine, and I barely had to think about it today. When I got home from footy at 5 it was all ready to go. Could have something to do with the age of the animal but it had pretty much no gamey/goat flavour or scent.
