    Does look very nice. Is that just a chunk of hind quarter and how was it cooked? Seared in pan then in oven to finish?

    looks edible, was it well and truly up to room temp before cooking and rested in a warm spot?
    Those two things help a hell of a lot in more even cooking threw the meat.

    I would however , check that @Dundee hasnt been going a bit hard on the antihistamines. I mean to say. The watties bottle wasnt even in the background !!!

    Took the meat out early morning,was cooked in a frying pan it was very yum,never tasted it cook like that before.,got another bit in freezer thats 4 the bbq if we ever get rid of the wind.Get mr dundee to cook it next.
