Thread: Nasturtium pesto

    Nasturtium pesto

    Decided to grow a bunch of herbs this year, nasturtium plant absolutely exploded and i heard you could make pesto out of it so had a crack at it, absolutely delicious. Tossed it through some pasta.

    70g nasturtium leaves
    4 mint leaves (or 2 heaped teaspoons of the dried stuff)
    3 garlic cloves, peeled
    6 nasturtium pods (or more if you want it more peppery)
    4 nasturtium flowers
    60g pine nuts, toasted
    80g parmesan, grated

    Juice and zest of one lemon
    1/2 cup good olive oil
    Salt, to taste


    Blanch the nasturtium in boiling salted water for 30 seconds then quickly remove and place in ice cold water, squeeze out as much water as possible then whack all that shit in a food processor, adjust with olive oil until you get the thickness you're after.

    Never heard of it before.

    I do the same with watercress... Use cashews..they ain't quite as good but a shitload cheaper...

    Looks like this, as a bonus they seem to keep slugs out of the garden as well.

    Cashews is a good idea, i'll have to try that. Had good success with walnuts in the past too.

    you can find them about near anywhere, grow like a weed.....
    White butterflies love them, grew some to keep them away from the veges. Dumb move.
    The flowers are often seen in restaurant offerings and the fruits/seed pods are used as a substitute for capers.
    Classic edible flower etc. Been rated the highest content of the jizz for keeping your eyes healthy.
