The New Orleans arm drip - the best sandwich i've ever eaten. Ever.

This sandwich gets its name for a good reason.
Learned this just today and had to make it again as soon as i got home, it's that good.

    Ingredients

    A top round roast
    Peppercorns
    2 bayleaves
    3 large onions, sliced
    Beef dripping
    Butter
    French bread
    Swiss cheese
    Mayo (preferably homemade)
    3/4 cup flour

In a pot, add the roast, peppercorns, bayleaves and top off with water to cover, simmer for 2 hours. Slice beef as thinly as humanly possible and reserve. Save the liquid.
Add onions and a healthy amount of butter to a pot, cook on low for 10-12 minutes or so until very soft but don't let them get any colour.
To another pot, add equal parts dripping and flour, cook on a medium-low heat until very dark, like the colour of caramel, add the liquid and continue cooking until desired consistency is reached. Season the gravy to your taste. If the gravy isn't beefy enough to your tastes you can add a stock cube.
Smear bread with mayo, add the beef and smother it in gravy and i mean SMOTHER, if someone is in the room watching you, it should be uncomfortable, really drown that fucker.
Top with the onions and slices of swiss cheese, put until the grill until bread is toasty and cheese is molten and bubbly.
    Consume.
    Die.
    Be reborn a new man.

I wish cookbooks were written this way. That line is gold.

Judging by that avatar @Gapped axe, you need a few calories.
