    Paua Flan

    Morale is not high here at present...a beautiful birdy dawn for dogs and gun and I cannot get out there...body saying you need shellfish, shellfish...so I hobbled to the freezer to get a small bag of paua mince which I had been saving for a special occasion...this is West Coast paua we are talking about!!!...given to me by a friend who with his wife are at present down there somewhere throttling trout!!

    Thawed, the bag was about 500grams worth, then added three eggs, a heaped tablespoon of white flour, a few sprigs of parsley, a chopped white onion, salt and pepper, half a cup of breadcrumbs. Had the frying pan melting a goodly dollop or two of Fonterra's finest and put the whole lot in, flattened it out, once the base was crispy, put the pan in the oven at 180 until it was cooked firm...



    The piece I have just had has cheered me up...might need another piece just to make sure...

    Redbang, I forgot to add, that the eggs need to be beaten before adding to the mix!!

    Reminds me that I need to get a couple more bits of kit and get back into the water. I was always part fish.

    If you need that bloody kit gadget ,come round here you big hearted arthur -we can issue it on loan.can we form the support crew ,as ellesmere is grouse for diving at this time of year im told.plus if you got stuck on the bottom a well placed wader boot up the gunga should propel you to the surface post haste.
