    Paua and Venison burger.

For the vege haters.....make up some patties as per https://www.nzhuntingandshooting.co....burgers-81353/

    Slice your perfectly prepared Paua.

Cook patties first rest in warm oven, flash fry the Paua in the same pan that the bacon, onion, garlic and patties have been cooked in...super hot...less than a minute.

Blue cheese crumbled onto the base of the grilled burger bun, you could use some other cheese if you are allergic to penicillin or are just some kind of freak that doesn't love it.

    Was pretty bloody good.
    Free FYI

The key to Soft Tender Paua is all about what happens after they get off the rock.

Once ashore separate the live Paua and lay in a bed of Salt Ice upside down... Bury the shell in the ice but leave the foot exposed.
Once all your Paua are sorted like this don't bloody touch them or open the lid of the chilly bin for 24 hours!

Then they can be shucked and will be tender as a fallow back steak.

You’re getting sophisticated in your old age? I’ve just been reading on Anthony Bourdain, even he would have enjoyed that with a beer!

The thought did cross my mind but these Paua are so nice and tender it would be a shame to mince them.

Glad you still have class, "Waikato" would have added the "swamp" flavor.

Interesting will have to try this out. We remove from shell and remove the bad bits, then sit in a bowl of boiled water for no more than 2 minutes - that renders them super soft. Then slice and do whatever, fry etc...
