Slice your perfectly prepared Paua.
Cook patties first rest in warm oven, flash fry the Paua in the same pan that the bacon, onion,garlic and patties have been cooked in...super hot...less than a minute.
Blue cheese crumbled onto the base of the grilled burger bun, you could use some other cheese if you are allergic to penicillin or are just some kind of freak that doesn't love it.
Pattie on top then a dash of Glasseye Creek sauce.
Paua on top.....one and only one sliver of lettuce on top of that.
Enjoy with a nice beverage of your choice ( no Aussie beers or white wines)
