The key to Soft Tender Paua is all about what happens after they get off the rock.
Once ashore separate the live Paua and lay in a bed of Salt Ice upside down... Bury the shell in the ice but leave the foot exposed.
Once all your Paua are sorted like this don't bloody touch them or open the lid of the chilly bin for 24 hours!
Then they can be shucked and will be tender as a fallow back steak.
Interesting will have to try this out. We remove from shell and remove the bad bits, then sit in a bowl of boiled water for no more than 2 minutes - that renders them super soft. Then slice and do whatever, fry etc...
