    Prepping a whole pig

    So I got this little piggy while out hunting goats and will be cooking it whole in the pizza oven.
    I gutted it in the field, and since I don't have the facilities to scold it to remove the hair, I used a blow torch to singe the hair off.

    My concern is that even 12 hours later, my hand still stink of singed hair. If my hands still stink, while the singed hair taint the meat during cooking?

    I’d no worry about it, but you might choose to WIPE it down with a wrung out cloth that has been soaked in water with white vinegar. Vinegar is a natural cleanser and can also tenderise meat. (Slosh of vinegar + some sugar added to casserole makes the sweet ‘n sour variation).

    steam cleaner/waterbaster will solve most of that...and Ive done plenty of pork with lpg to remove hair and meat tastes just fine........ you could chuck half a handfull of manuka sawdust in pizza oven to give it the naturally smoked/singed flavour. dont forget some apple sauce/apple baby food to go with pork,works a treat if it comes out slightly dry,but cooking it skin on should help no end to keep moisture/flavour in.

    Unfortunately, I forgot to take any decent photos of the finished product. Had friends arrive and got distracted.

    I popped one when I took it out to remove the foil. The skin was just starting to crisp up.
