Our weekends usually end up rabbit shooting. @BeeMan shot a perfect young bunny so I made my first ever casserole tonight. No recipe but sautéed lots of bacon, onions, garlic, carrots, rolled the rabbit in Dijon mustard then dusted with flour, paprika and thyme, browned then added chicken stock, bay leaves, a squirt of tomato sauce, tsp of tomato relish, tsp worcestershire sauce, salt and pepper and a small handful of raisins. Simmered for 1 1/2 hours then added a handful of rice, cooked for another half an hour and yummy, yummy. Just hope I can replicate it again.
