I would suggest a dash of white pepper in with the bread crumbs and add a tablespoon of butter to the oil for colour and taste.
I do venison bites like this with the less used cuts. Hot n spicy or a sweet dipping sauce.

I got a better one. Cut the rabbit up in the following bits.
2 back legs.
2 front shoulders.
2 back steaks.
Mix up some maggi chicken and sweetcorn soup. Rinse the rabbit and put the cuts in cold.
Heat up the soup until just starting to simmer. Turn off and leave the rabbit in it until cold.
Then do the breadcrumb and egg thing with the rabbit. Put salt, some cayenne and pepper in the breadcrumbs.
Deep fry it.
It tastes like Kai For Cuzzies now.
I think a can of pineapple, some mushrooms, tomatoes, peas, onion, cheese, potato, and eggs and bacon would make them grouse
