    Sausage stuffed roast chicken...yes you heard me!

    Just had to share this one with you guys
    This was a weird one but for some reason it worked...my god it worked!
    I really wish i had photos of it as it was f*cking delicious!
    Probably wise not to eat this often as it's basically a roast heart attack but whatever >.>


    Ingredients:

    For the stuffing:
    2 or 3 pork sausages depending on the size of the bird (mine had chipotle pepper, fennel and other spices but any italian pork sausage will do here)
    1 clove of garlic, peeled and minced
    1 lime
    2 and a half heaped tablespoons of breadcrumbs
    Olive oil
    Parlsey


    The roast:
    1 chicken
    4 slices of cheese (a swiss cheese is probably best here, i used gruyere )
    salt & pepper
    Cayenne pepper
    Cumin
    Oil

    Method:

    Wash the bird, pad dry and loosen the skin around the breast and thigh with your finger. Place a slice of cheese and some oil under each part.
    Remove the casings from the sausages and add the meat to a food processor with the zest and juice of a lime, minced garlic, chopped parsley, the breadcrumbs and a glug of olive oil. Pulse until well combined and slightly gooey.

    Stuff the mixture into the cavity of the bird and liberally dust the outside with plenty of cayenne and black pepper as well as the cumin and the salt. Squeeze over some more lime and a healthy glug of oil.

    Roast at 200 degrees for about an hour and 10 minutes or until the juices run clear and the skin is crispy.

    The drippings from this make a gravy that is just unreal!
    It has a nice, subtle heat to it and a really rich flavour with just enough acidity to cut through it.
