Thread: Something pheasanty...

I am developing a recipe for pheasant which I got to the planning stage at work...the pheasant part will have to wait until I get the rest sorted...have not progressed as far as I wanted today but anyway...the basis at the minute is, picture if you will, a slurry of pureed pears and Jeruselum artichokes...wicked...needs some nutmeg, I think. Also did a taste test of croutons of each fried in olive oil, unfortunately no sunflower oil in stock...beautiful...olive oil has too much flavour for the delicacy of the artichokes and pears...it is, alas, going to be a work in progress...more to follow.
