Being a keen wild game cook I often get
asked how do I cook this lump of meat a mate gave me.
Tonight I was asked for a Tahr recipe of all things, not alot of Tahr in the Central North where I hunt and I have little experience with the majestic critters in the hills or kitchen truth be told.
Couldn't see any recent recipes that caught my fancy.
Seems like slow cook it and she'll be right. That said, there's a great restaurant I know that makes a ka pai tahr pie with an amazingly rich red wine reduction and flash mash.
Did a quick search and came up with is little beaut from Al Brown, love the mans work. Prolly extend just as well to a ropey red and possibly loin of wallaby Mickey D.
