    Siracha(spelling) sauce.

    The base fritter sounds great. Might give it a go with these NI mussels and see what it goes like. (Being a newbie to to NI, the simple things - mussel taste - can sometimes be very different. Ie NI white bait is crap, and NI oysters don't taste like bluffs.....)

    I really like the general brew though.
