    Venison Carpaccio

    Thought I would toss a couple of my favourites out here.

    I have traditionally used Eland, kudu, oryx etc but it works just as well with the local game.

    Slice fillet or sirloin as finely as possible. Place between 2 pieces of cling-wrap, flatten with your hand (ala karate chop or ball of your hand). Spread out on a platter, sprinkle liberally with balsamic, olive oil, lemon juice and season with plenty salt and pepper. Cover with shaved parmesan, rocket leaves and capers.*

    Its a great starter.

    Nice one

    Welcome to the forum
    If i leave a shot deer on the hill ( after gutting and splitting the ball joints ) in the winter i often eat some of it while I'm cutting it up for the carry out.
    I should take a small bottle of dressing with me in the winter

    all you need is a bit of good quality soy.
    balsamic and olive oil are awful and any vege that is green (apart from chillis and spring onion) are pure evil

    Meat and potatoes only guy eh?

    I will give this a go as instructed.

    Kina, pineapple (tinned) and Broad fucking beans are only things I have tried and will never eat again.

    spuds inc kumara, onion, garlic and a bit of tomato paste on a pizza is about it. a few herbs and spices too
    my diet is pretty much animal based for 45 years plus
    i think i must fund the dairy industry as i get thru 6-8 liters of milk a week

    Amen to that. We were force fed them as kids. - made to stay at the table until they are all gone off the plate. Broad beans are disgusting, but a lot worse when they have been sitting on your plate for several hours and are all dry and cold. Never eaten one again since I left home at 16.
