    Appreciate the comments. I know the risk is low, but I'm not willing to risk it for the sake of some rare steak, when in a few months she'll have had the baby and be able to eat all that stuff again.
    @No good names left and @Kimber 7mm-08 great thought about the velveting. I use cornflour for velveting when I do my sweet and sour venison. Hadn't thought about using that technique while the wife is pregnant. I'll definitely be trotting out that recipe again.

    Chicken slow cooked is a great way to catch listeria.
    Not ideal for a pregnant lady.
    Overkill is still dead.

    Well that `s the cultural difference. I guess kiwi will not eat raw koi fish as shashimi, but Chinese do as well Japs. Good tasty foods and nitration is one thing, another is how much can be digested and absorbed.

    meat dish with one small chook ,one piece of pork and one duck works well..the fats n flavours compliment each other nicely and them heathens who dont eat duck can just eat the other meats on offer LOL. slow cooking chook isnt a problem.the mighty crock pot cooks 99% of ours.not doing so for long enough of hot enough for sustained length of time however could be.

    It's lower now for a reason, if it was your unborn kid would you throw caution to the wind? Not saying it's likely to cause problems but if it was your pregnant wife wouldn't it be worth every precaution?

    Focus on two meals of a fish each week high in omega-3 for your child neural development would be my professional advice.

    @Dicko we typically eat fish at least a couple times a week. It’s been a bit harder during first trimester due to morning sickness and what she can stomach, but that seems to be clearing up now and she’s actually been wanting fish again now.

    Slice your steak very thin then breadcrumb it and fry in butter.......in other words make it into schnitzel......even well cooked it is normally tender from my experience... if the first lot is tough, bash it with a meat tenderizer then flour, egg and breadcrumb it...

    Cooked it that way for a female 'guest' I was entertaining.....she refused to even consider eating 'Bambi' or meat that was rare....I disguised the back steak (Fallow) by slicing it thin and bread crumbing it. Told her it was supermarket meat...
    Thought she might be 'The One'.
    Ended up having a deep and meaningful, long term, commitment orientated, 'Till death us do part' one night stand as she was borderline Vegan.......

    No problem....the principles we sometimes compromise to get a good time.........not necessarily a long time in this case....
