I had some kangaroo jerky and i liked it, so I'm thinking of making some jerky out of wallabies.
I was wondering if wallabies are safe to eat with out cooking them while drying.
I'm hunting around Rotorua.

Can't see why not, usual check of internals for signs of ill health. Wallaby will taste different to Kangaroo which is more like venison. I've made lots of jerky from deer, beef and horse in a dehydrator so give it a go and report back.
Velocity is thrilling,but diameter does the real killing.
Meat is pretty much meat , when it comes to curing it ... I cant see that wallaby would be any different ...

Wallabies are bloody delicious Gnar.
I've eaten plenty from around Rotoma, I especially liked the Tail
Cant see why you couldn't make jerky out of it either.
Unfortunately for me I lost all my farm access in the mid 90's when there was a change in Farm Policy coupled with a change in the Farm Manager.
Haven't hunted them since.
