Yup i do, this may take a while
Equal amounts finely chopped mushrooms and onions. Very gently fry them off the mushrooms and onions to get rid of the raw taste. Let them cool. To a mixing bowl add finely ground venison, i use a little magi mixer and works a treat. You need a good ratio of meat to onions and mushrooms, probably about 2/3 meat to 1/3 onions and mushroom mix. Add in salt, pepper, worcester sauce, good squeeze of tomato puree. Mix it together. At this point it will be quite a wet mix. Add about half a beaten egg and then bread crumbs and keep mixing until it comes together (get yer hands in it lad). Cooking of the pattie is maybe not conventional. Make it a good 1/4 pounder, fry it off until the outside is golden on both sides, not burnt, then put in in the oven for about 8 minutes (180 celsius fan bake) to cook the centre. Take it out and let it rest. You sir, now have one hell of a tasty burger. The recipe does not do it justice, moist, tasty and blood well filling. Enjoy
