    Whitebait patties - recipe ideas

    I mean to have a couple of whitebait dinners shortly and I have the standard West Coast recipe with white bread, butter, tom sauce!!, and patties done in egg with touch of lemon, salt and black pepper. Wondering however if someone has recipe variations.

    The above makes for a pretty bland sandwich - perhaps necessarily so because whitebait do have a very mild taste and that's the chief ingredient. But are there other recipes that could add flavour while still staying in whitebait taste zone. Maybe herbs/spices added, different ways to prepare the patties??, or good salads etc to add some character...

    WTF??? I have yet to meet a West Coaster that puts fucking tomato sauce on their whitebait. Theyre 100% an imposter. I know pubs and restaurants that would ban them for life if they found out.

    If Dundee sees your original post I will never live it down

    Will pm you my Grandads recipe we have used as long as I have been eating the stuff and it has never changed.

    Toastie pie Whitebait.

    Heres a way we do them when on the coast. Have a fire going and a toastier pie maker, [we use the single round ones with folding hinge.] Piece of fresh bread with butter a good dollop of bait, season to taste and a squeeze of lemon, another piece of bread and toast in the fire till toasties are brown etc. Comes out great and a good snack to have while waiting on the next lift.

    Don't jump up and down girls ... I may be wrong about the tom sauce!

    One lb of whitebait given to me by old Coaster couple of years back with stern instructions to follow old coast recipe. Which is why I'm looking for alternatives

    At the risk of getting flamed by the whitebait purists, I have a recipe that I'm wanting to give a go and I'm happy to let you be the Guinea Pig.

    I have a base recipe for potato and carrot fritters... basically grated spuds and carrots. Wash in colander to remove potatoe starch then hand mix with a couple of dustings of flour. A very light smattering of red onion, salt and pepper. Cook in frying pan with plenty of oil. If done correctly you get these outstanding crunchy fritters. Last time I whipped them up I thought - damn these would be fantastic with a huge dollop of whitebait on top. You'd have to make the traditional egg and flour mix for the whitebait then add the whitebait towards the end when the potatoe fritter is getting close to being cooked. End result should be outstanding. In theory.
