yankee style smoker
after making some venison jerky today with a bit of silverside and using a dehydrator I think I want to expand on the idea and build me a big cold smoker,
I like the look of the american style after watching too much bbq comps on food channel.
does anyone have any practical experience with something like this??
I can knock one of these up pretty easy....
any advice or tips Im all ears.... well eyes!

My wife's cousin has a Steam train running on tracks complete with it's own tunnel for when not in use.

Im thinking of using an old hot water tank for the top and fab up a firebox for the bottom out of 500mm pipe

I like your way of thinking, big. Though, for a cold smoker, why not make a smoke generator that burns sawdust? Then you just need a shelved cabinet to hold the meat and smoke

after a spell of research I have come to the conclusion that I will have a crack at making a gas ring powered smoker.
It will be with a vertical cabinet (ex water cylinder) and a wood box over the ring.
so pretty much what you said damz....
I have the cylinder the ring and a reg so I will look at this over winter in my shed

The heat from the gas ring could be almost entirely negated with that design too

An uncle has a old oven that's soley used to smoke Kai just turn the thing on and put food in.......with what ever style chips ya need.
