As above, when we did a reno I repurposed the kitchen bench to a reloading bench, formica is easy to clean off. Use the old stainless sink as an outside filleting / parts cleaning station as well.
You can make drawers for underneath if you like, out of plastic bins on runners from the DIY shops.
One tip i will give, if you use a beam scale, mount it at eye level on its own shelf, so it is easy to keep an eye on the finer gradients etc.
Use a parts box from Mitre ten etc to store your dies in, that way they are all together and use some dry silica satchets to keep humidity down.
A shelf full of die boxes might look impressive, but the dies themselves are better off in a drier environment, like the house rather than a shed ( where I reload.)
