Bob Whitehead always ran his GSP's real lean... like really lean. and they were healthy and performed. You can increase fat, the issue is Fat is to dogs what sugar is to us and the increased energy level often negates the effects!
Bones will never put fat on a dog.
I'd be inclined to get fat from the butcher to render and pour onto the dry food you are feeding. Unless there is a medical condition the dog will eat what it needs, even if it looks like a long distance runner. However there are possible medical considerations too like Pancreitis @ethos might be able to shed more light on this.
