I talked to the taxidermist, he said to do the traditional way was alot more time intensive therefore expensive. Also reckoned typically get a better result doing a representation based off of measurements, colour and photos.
Bodes well for fish that are caught but are over maximum size such as in the Rangitikei back country.
The key here is to take measurements and photos as quickly as possible to minimize damage to the fish in order to effect a safe release.
