There are 2 advantages with the electric model. The first is the obvious one, they have a larger capacity tube, 10 litre and 15 litre, so if you regularly want to process larger quantities, say 30 kg or more then electric might be the way to go.
The other advantage is they can be run using a foot pedal so you have both hands free, one for controlling the skin feed off the tube and the other to clear the made sausages.
The golden rule is you get around 8-9 sausages per kg of meat. 1 kg equates to 1 litre. Hope this helps.
