    look great if only I could sharpen knives instead of blunting them to blunter
    But I am learning to make them less blunt

    Butter knives cut butter

    I’ve seen blunter than blunt butter knives in kitchens!

    I’ve met several chefs who simply bought a new knife once the old one lost its edge and needed a stone

    Equally I’ve met many chefs who could achieve razor sharp, lest I be accused of generalising lol

    Ex wife was a chef, I'd get a briefcase full of knives to sharpen by hand.

    I don't and I can't find any specifics from Victorinox but from reviews it seems to be between 400 and 600.

    I am awaiting adjustable bases which can take a variety of stones

    The double sided stones a fat enough to give plenty on knuckle clearance so you can sharpen fine on them just on a towel or bit of wood
