   I smack em on the head then cut the fillets off. Hold its tail and stand on its head and run your sharp knife down the back bone, they peel off nice and clean.

   Key thing with rig is to immediately "trunk" them- whack their head, tail and fins off so they bleed out quickly. The ammonia in their blood taints the flesh otherwise. I worked on commercial boats...
