I would love to Shoot a Wapiti in Fjordland,I really should just plan and do it.

For you Kiwi blokes wishing to hunt overseas, please exhaust your options in New Zealand first. It is such a magnificent place to hunt and the skills you bring to each and every backpack hunt are far in excess of what your average European Hunter can dream of obtaining.

I wanted to shoot a Brown Bear and a Moose but after living in "Swamp Donkey and Grizzly" Country for about 5 years in total the desire wore off.

In NZ , my bucket list trips are

A wapiti block in the rut (it doesn't matter which one but a core block would be awesome)
Queenstown fallow ballot in the rut
A tahr hunt in the Landsborough/Karangarua
Walk from East cape to Wellington with a dog and a rifle.

The last one is probably the least achievable while keeping fulltime employment I think, not to mention with Tuhoes rules on indicating dogs I may revise it to go from Taupo to Wellington instead.

If I get to do those things I'll consider my hunting life reasonably well lived.

Not sure. It will be my first time in Saskatchewan if I go this year. That winter was in 17?
The Outfitter I am working for has had a few good ones in the last couple years. Better than I would be happy with at least.

Cape buff would be awesome and top of the table. Haven't got the talent or the money for that...only the rifle.
Closely followed by a big cranky lion. Back when I was young a leopard would've been on there too but I've cooled on that. Not enough talent/money for that either-mind you that probably applies for most of these lol
Would almost consider one of the massive Alaskan type bears but same applies for that too. Cant remember the area but there is one in particular (Kamchatka?)but I think. Russia have similar.
A big moose would be nice and as a previous FM @quadhunter260 posted some hunts with other forum people would be fantastic
Don't reckon the missus would ever talk to me if I got a Bear or a big cat and I deffo wouldn't be allowed the trophy's in the house
Always thought a new Caledonian Rusa would be nice too.
Nice and warm and the missus could be having a break while I was out and about.

Cape Buffalo should fulfill your criteria. Thick-skinned dangerous game.

Because if they were, they'd be hunted to extinction.

Has nothing to do with size as I still have to deal with them for clients.
I will probably never take another Bull Thar or buck chamois in my life either. They would have to be ginormous and old for me to consider it. Still love hunting them tho.

Always wanted to spend a few weeks in the kaimanawas/kawekas...new to me species plus new country to explore is appealing.

    "Muskox in Greenland
Roe and CWD and Muntjac in Britain
    Dingo in Queensland"

Just did the Muskox in Greenland, @muzza, heck of a hunt really & same booking agent could line up the three Deer in the UK .

Why QLD for the Dingo, I would recommend the NT for the same animal, but a Alpine Dingo/Wild Dog would be cool from down South .
