I have taken a few deer apart over the years but last year I was with an old Mate who has done many years as a guide for US big game hunters - I shot a spiker and started the process to gut the animal when Neil said to me - hey wait a minute - tie off the esophagus (at the front end) - he ripped it clear of the neck and tied it in a knot - the esophagus is the feed pipe to the rumen which is full of all that green stuff - no gut contents are going to spew out of that when you pull the guts out of the animal - so simple and it took me 50 years to learn it!
Ask better half for any old pillowcases to use. I would be furious if they were just taken. Mr H. asks for all sorts of things and I never sayn he cant have them. I find the ones that are dispensable and hand them over; sheets, pillowcases, duvet covers, tablecloths. Us old people have way more shit than we need. now we can add meat to the list. I feel like i live in a butchers shop!
I wonder if Mr H knows that?
Heat, moisture and contamination can cause meat to spoil. Contamination can come from the inside of the animal (i.e. bacteria from gut) and the external environment. Hunters can't avoid these factors entirely, but the aim should be to limit them as far as possible.

But youtube is your friend here, there are a gallzillion vids out there. The first one by @Projects above is a good one. Check out Steve Rinella's Meateater vids, they have a North American approach to them on account of him being American but the video quality is very good

When hunting think safety first
That vid has no tie off of the windpipe. Also the pizzle and balls are not taken off, nor the bung hole released and tied before pulling the guts out. Then at the end there is a wipe out with grass. If the windpipe is tied and freed from the neck and the diaphragm is cut round after the guts are out it is a simple reach in, grab the windpipe and pull everything down leaving a spotlessly clean job as a membrane lining the chest cavity will pull down and carry any blood etc out.
