I've considered it as offal, I used to boil up cleaned guts for the dogs, the cooking smell was awful.Couldnt stomach because of that.
Tenderloin sliced thinly and dabbed in breadcrumbs, Fried in butter for 30 seconds a side s beautiful. Better than back steak in my opinion. It could be worse, people not eating hearts.. there are people out there who just won’t touch wild meat at all, supermarket stalkers
likely a few hunters out there who are to blame - manky old stag in roar -skinny old boar- yup lets give the neighbours some -and puts them of for life - I wont give away what I would not eat myself - its what some idjits do to my venison that wrinkles my brow - one boss I had marinated prime fallow steaks in balsamic vinegar and then complained about how it tasted - I felt like saying well next time try waste oil likely you will get same result - I had hung it - vacuumed packed it- and the muppet does that- balsamic vinegar
Most guys who I have hunted with who have had reservations about the heart are converted once they eat it.
It's something I look forward to on a hunt as it's become a bit of a tradition to have heart as a good feed.
We often have a BBQ type cook up at work, put a rolled pork roast on the spit and often I take in heart, kidney and liver from deer or sheep and do this on the BBQ with onions and a bit of spice. I can tell you what gets nailed first by most of the guys never any let over.
I dropped off to an ex boss a fallow back steak and large portion of rump...so fresh it was not even cooled down yet...was stil lwalking around an hour beforehand....strict instructions to leave in fridge for 3 days before consuming...a week later he made CASSEROLE...... I nearly cried when he told me...... that was some of the nicest venison Ive ever harvested..fat young hind....

Never tried venison heart or liver. I'd give it a go though. I have in the past had stuffed lamb heart which was delicious. Veal and lambs liver is also good. I've cooked more than my fair share of kidneys for steak and kidney pie when I was younger and the smell of that has put me off them for life...
liver was always overcooked as a kid ..put me off it for life...kidneys are ok in a pie..PIE IS GOOD .... but otherwise not interested at all... funy havent had feed of brain for years,but used to always have it when Dad killed sheep in early years...funny how our tastes change over the years.

A mate took some aged and marinated back steaks with us on a fishing trip.
Gave it to the chef of the pub we were staying at.
Enough to feed a dozen of us.
It came back sort of broiled.
I thought my mate was going to cry!
Lesson learnt, don't assume a chef knows how to cook venison.
so it seems that many agree offal not their cup of tea - but here's a recipe I believe many would agree to - 1) get your mates as pissed as you can 2 ) fire up BBQ- 3) serve your drunken mates offal liver heart what ever on BBQ and they will eat it -- seems about right for how this thread is going
For me the choicest cut from a deer is cold jellied tongue on fresh bread n butter with a good helping of train smash .Oh and a cold beer chaser.Even dirty old manky stag's tongues go good
nah when your pissed its peanut butter on white bread..thickly spread..goes down a treat...and if you drink far too much,comes up well too. now half chewed pizza not so much and has been known to burst a fellas blood vessels resulting in a red eye for a week....the things we did when young dumb and full of cum
