I hear ya! Have had knee issues myself and found that the step ups really help as long as you start low and control the down movement. Knee stability is underrated compared to fitness. No need for fitness if you can't move... Good luck!

If you leave the suppressor behind make sure you zero and check your rifle without the suppressor. Often changes POI.
There are only three types of people in this world. Those that can count, and those that can't!
If you learn to shoot off a sling, prone, sitting and standing then you get a " two in one" accessory for your rifle.
A sling is one of the most useful additions to your hunting set up.
Two important factors for this and any hunt are :Fitness
:Firearm proficiency
Split your time between training and the Range, have fun and remember to post photo's.

I dont feel I have been Tahr Hunting enough to offer solid advice, however I did do the 7th period this year and managed to get my first,2nd and 3rd Tahr.
I too agonised over what to take. End of the day I saddled up my 7mm rem mag no bipod or suppressor and shot off my coat and pack.
Biggest assets I feel I took were, a good scope and good binos (steiners) and a great sleeping bag :-).
Well I have the scope, bino's and bag (+ rangefinder). I will probably leave the bipod and suppressor behind. Just make sure I get out for a range session before I leave. I used to do a lot of indoor 22rf prone shooting which is all on a sling. However that was a while back. With all the rain we have had up north the dairy runoff block I use has been too wet to drive up to the little brown rock quarry I shoot into.
I discovered the importance of knee stability a few years back. Had been doing some fitness work but after a coupler of good downhills they where killing me. Since I started the steeper walks I have had zero knee issues (touch wood).
