With deer i try bone out in the bush so all meat gets eaten . I steak all meat i can and the rest goes into a "leftovers" bag which i acumulate and make into meat patties / salami / sausies
If im way in deep and pushing daylight i will just tahe the back steaks, hind quaters and a few rough cuts at the rest.
Im not a fan of goats so if i shoot one it is for pest control only and i cant remember the last time i bothered with one.

Bunnys clean shot and close to the wagon(or you spend all night picking up instead of shooting) get picked up gutted and usually given to mum, I like em but the missus not so keen so i go to the olds for rabbit cassarol
Never been much of a possum man but i just plucked em.
Any big game, If at all possible il get the whole animal out. Two dogs that love bones and things just age better whole in the chiller. If not depending on the situation il just whip of the quarters back and fillet steaks. If its a long way or Im already stuffed il bone out the hind quarters and back steaks leave the rest.

What i do with it depends on the condition of the animal but.
    Venison best bits steak/corned rest stews/sausages /salami's
Pork if its a nice one roasts and chops or rolled roasts. If not sausages
Goats nice fat young nannys back wheel roast rest sausages or dogs.

I try to mix in a bit of pork or goat with venison for sausages to add a bit of fat.
"Hunting and fishing" fucking over licenced firearms owners since ages ago.

308Win One chambering to rule them all.
