    When you go to the super market, do you ask the butcher "where is the 3yr old ram ......." or "can you show me where the old stag meat is please ...."
    You want young and tasty. Goat is the same. Pick the billies if they are under 1yr old and haven't seen service if you have to, but when there's plenty of nice young nanny's around, why bother. To save weigh when hunting, I bone out my tasty treats in the field and only bring back meat, no bone. Refrigerate it for a couple of days, then go through and cube it up ready for any type of casserole you choose.

    My family feasts out on goat as often as I am able to go out and gather it.

    Someone has been shooting goats up the Ngaruroro and taking the back legs and back steaks. Billies and nannies.
