I enjoyed that. Probably more than the 'professional ones' on the TV...I really like the set up in the back of the truck. I am looking at making something similar for mine now.....
A couple of suggestions for you to consider;
While keeping the mag and bolt in the glove box is a good idea, perhaps it would be better if the live rounds were ina plastic bag or factory packaging...The law states that you should not have a loaded mag in the car. While I believe the intent is that the loaded mag would constituit a loaded firearm and this is clearly not the case in you video, the law is poorly written and could easily be used to get you in trouble.
I would be inclined to blur our the rego of the 4wd or cover the plate so it could not be easily identifed by potential thieves. (or police who want to see if you have a loaded mag in the glove box....)
I saw you stringing one of the carcasses up with the stick between the legs and then in the bloopers saw the trouble you had with the last leg...If you string the carcas up from the anus / pelvic hole then the legs are fre to work on and the animal will not fall when the leg is removed....It also means you can boe out the leg more easily too....
These are not things you did wrong, justthings I think you may want to try / consider.
