I’m looking to pick up a Howa barrelled action for project soon, in either 7-08 or 308, but need to decide on light barrel or standard barrel profile.
Am I going to loose much consistency or accuracy with the lightweight?

Nah, my alpine mountain rifle is accurate AF.
Unless you plan on shooting long strings (the thinner barrel heats up quicker) get the lightweight.

"Here's the deal I'm the best there is. Plain and simple. I wake up in the morning and I piss excellence."
I am using a howa with a heavy barrel for FPR shooting and another one that is an Alpine Mountain for hunting.
Every time I use my hunting rifle to 12 shots strings in the FPR class I got better groupings even though the barrel is shorter (lower velocity) and the rifle is lighter (a bit more recoil). Only compared the two up to 600m.

What you see, is what you get!
Also depends on what barrel length you require. The lightweight version (usually has the lightening cuts on the action) is a 20" barrel. The standard profile is 22" long from the factory.
A bunch of Howa barreled actions in 6.5 PRC are coming in shortly.
I’m contemplating one so I can tick the 6.5 itch I seem to have
