If you don't want to go second hand or rebarrel a rifle from another calibre (both good options), would the budget stretch to a Cooper Model 52? Would seem to tick all the boxes, and open sights are a factory option. Other than the Cooper and the Roessler, the only other new 7x57 I can come up with is a Montana ASR - and that doesn't have open sights. I'm sure that aftermarket open sights could be fitted by a good gunsmith, either by drilling and tapping the barrel or by soldering them on (probably up for a re-blue then though).
They still do, very popular chambering in Europe and Africa.

The American market has also gone to the 557 centrefire but other markets still get the 550.
Your local agents just won’t bring them in as probably not that popular there.
Send them an email and ask if they would import one on their next shipment for you?

Not sure if you have an importer

I definitely would rebarrel another rifle but I've got no idea about that stuff, I wouldn't know what a good donor rifle/action is or who's a reputable gunsmith in Aus. Besides that aus being aus I'm sure they'd charge like a wounded bull too.

Pity you dont want to stretch to a 7x64... https://www.nzhuntingandshooting.co....weather-42429/ Its gorgeous....
+1 on a new cz
Would a cz 550 in 9.3x62 be able to be rebarreled to a 7x57 or are the actions not compatible?

Cheers mate,
Nah, I had a chat to my brother last night and as I said to him I could happily buy a mauser m12 or something similar in 7x64 but it wouldn't be a 7x57 and I'd still want one. My sako will kill anything I'll ever hunt so I don't need a new rifle, I just want a 275 Rigby.
It's a romance thing, I grew up reading Jim corbett and Walter bell and Ive always wanted a 275 Rigby with open sights so it's that or nothing.
I see myself owning 4 rifles in my life, a 22, a light synthetic big game rifle, a muzzleloader and a 275 Rigby. Got all of that sorted bar the last.
Unless I win the lottery then I might buy a double rifle that I'd never use!

You’d think that Lancaster one on Trade Me that was posted on pg1 would be bloody close to what you’re looking for, proper heritage rifle that would do the business just fine? You haven’t mentioned what you think of that one.
I think he has to get it to Stralia...nice rifle
I had a BSA Hunter 7 x 57 for years and loved it, they are a bit heavy but have a nice action and they do come up on a regular basis on Tarde Me
If there is lead in the air there is hope
Fair enough mate, I couldn’t imagine anything sexier than a matching pair of Rigbys in .416 Rigby and .275 Rigby!
And a Holland and Holland double in .470NE for when it gets dangerous!
There was a Brno ZKK600 7x57 with a custom Kevin Gaskell walnut stock on TradeMe for ages while my wife was on maternity leave and couldn’t afford it, I think through Broncos.
When she went back and I could eventually pay for it they told me the owner had decided to keep it, Bugger!
Keep looking, I am sure you will find one. It took me almost 2 years to find my 7x64!

May be a silly question, but have you looked at Sauer?
