May not be very practical for a hunting and or fishing trip.

    I have a Koaro packraft.

Very well made NZ product. Available in various lengths and options as noted above.

Also have two Advanced Elements inflatable kayaks. Great for lake fishing and covering some distance. 4x - 6x heavier than a packraft but then they are not designed to be "packed".

A commercial outfit based in Te Anau are the Alpaca distributor for NZ and they run guided trips down the Hollyford River.

If anyone is interested, I ended up buying a used Gumotex Twist 1 inflatable off trademe, and took it up around the Sounds last week, in calm conditions it went well and I caught 4 snapper, 4 blue cod and endless spotties in 1.5 days fishing. Need to get an anchor setup, any slight breeze or current meant I couldn't stay in position and didn't get any bites.

Not an ideal fishing kayak but it's very compact so fits nicely in the truck, takes 5 minutes to inflate, and cost $350. I'll replace it at some stage with a longer/wider inflatable, ideally with more attachment points for bait board etc.

@gimp think there was an article on these in one of the latest Hunting and fishing mags.
I'll see if I can dig it out and see what they used if you want. I know it fitted into a pack once deflated.

@gimp save yourself some pain and just start micro jigging or softbaiting, then the drift problem is sorted because that's what you want and you dont need a bait board, two birds stoned!

Maybe a drift anchor so you are not lugging too much more weight to fight the wind but not the tide? Include a small folding anchor too, just not too pointy.
