How hard would it be to set up, something like this ? Electronics are not my forte

Scratch that I think with the amount of use this will see maintaining batteries will be a pita will stick with gas

A while ago I met the chap that runs the yacht shop in Dunedin, Neil. He knows a lot about electric outboards. Might be worth calling him for info? https://yellow.co.nz/y/yacht-shop-marion
Electrical stuff is a dark magic to me, provided the smoke stays in the wires I'm happy.

If you use it wrong enough.

A small reliable 2 or 4 stroke would be my choice, that mud motor looks about $1,000 over the odds to me. (boatie since childhood)

Definitely gonna stick to petrol option and likely an air cooled 2 stroke.
I think I've been over complicating this, will see what's what when it gets here.

Electric might be low weight for the motor, but the batteries will more than make up for that saving. I'd look at air cooled 4 cycle, get them in the 3-5HP range now.

Why 4 stroke over 2 stroke ? Just curious

They are quieter, smell less, generally more efficient, like lower speed operation better. No mucking about with fuel mix. What you gain in motor weight you often recover with lower fuel load. Advantage of 2-smoke is less weight and simplicity.

My old man has been running a 2hp 4 stroke air cooled Honda on his inflatable tender for about 10 years and it never missed a beat. Can guarantee it wouldnt be up to a flowing river though. Its also loud as sin, like cant hold a conversation loud, though the old man is pretty deaf, so that doesnt help.
