    Watched a taxidermist skinning a tahr the other day with a knife of similar blade profile. Made a great job,.........mind you, give him a spoon and it would've just as neat probably

    I actually don’t know what happened to that knife, maybe I sold it? Or lost it? Or maybe it’s tucked away somewhere... not sure. I used it a fair bit though and had no problems with it, from memory it was ok to sharpen, the only thing I really struggle sharpening is Scandi grinds of any sort. Have had a custom knife for past three or four years anyhow and happy with that so no real desire to see if I still have it somewhere

    Diamond stones make high wear stainless sharpening easy.

    Gunna take a bit longer to sharpen than soft stainless, but not any harder. Most people just don't sharpen them long enough to reform an apex so it seems like they are hard to sharpen
