    Knife re-edging

    Team some advice needed...

    Was with a mate yesterday when he showed me this knife, clearly the edge was ruined dealing with a Halibut

    Can anyone recommend someone that can re-edge it, clearly an expensive knife so needs to be done professionally.

    Any knife maker is set-up yo do that. I have a neighbour that is set up and puts edges on the odd knives I get in from clients

    If he is in Auckland then House of Knives has a chef knife sharpening service.

    Or I can do it but it won't be quick.

    Is it worth it? Those are some brutal chips. I would expect your friend was not using it as it was intended.
    That single edge grind grind is traditional Japanese with 3 distinct sections (Shinogi, Urasuki and Uraoshi so Uncle Google tells me). To work one edge would require the rest be moved as well. I would doubt any local knife service would be able to help (properly).

    you could do it with the lanski type set up as your stone will maintain the correct angle...take some time by the look of those chips...buy the man a Bacho or 3 for jobs like that.

    But the leading Uraoshi edge would be lost making for a very fragile blade.

    Thanks team,

    Like @kiwijames has said it's a delicate setup... so don't want it ruined any further.

    It is a knife to be used on fish but not quite in the manner in which it was, fish was a touch large... he isn't happy with himself.

    No rush, I'm sure there'll be someone that can help...
