when did you last skin a concrete block or a 2mm thick piece of stainless.
the test knife i made was used to cut the spring fence wire with minimal damage. my personal hunting knife is made of it
Elamax can chip if you take it down too thin withought a little support to the edge. I needed to restore the tip of mine after doing a deer. The tip was very fine though, so I wasn’t too worried. I’ve just increased the angle a little bit.
Haven’t tried Vanadis 4
S35VN is a good stainless. The ordinary hunter who is not a knife nut wouldn’t tell much difference, and its usually cheaper. Bark River Wolf River and Gunny are good examples. Or have one made, as John suggests.
@Tahr what's your opinion on ATS-34 stainless steel for a hunting knife?
Mines made from it......
While I might not be as good as I once was, Im as good once as I ever was!

Nothing wrong with it. Very similar to D2 and 154cm in composition and performance, which are both good stainless steels. I’ve only had it in a 3” pocket knife, and I noticed that it did not chip like D2 does. It held an edge pretty well, and it is not difficult to sharpen. Mostly used in Asian knives, and is referred to as Asian 154cm. It should serve you well.
Cheers
Nah, that's not quite right, D2 is completey different from ats-34, which is basically Japanese 154cm, D2 is a tool steel and will rust, but is not quite a full carbon steel, it's a strange beast but is very tough, Ats-34 and 154cm are both full stainless steels and should not rust at all, many custom nice users made use of both in the 90's.
12c27 is a Swedish stainless with fine carbides, meaning it's got good stainless properties, is tough, will get sharp but has lower wear resistance than the more coarse, carbide steels out there, so you will need to sharpen it more often...
